Halloween Recipe #4: Pumpkin Cupcakes With Cinnamon Cream Cheese Frosting

Ooh, everyone loves a cupcake, right? Little mouthfuls of deliciousness and small enough to not feel too guilty, unless you eat five of course!

But we’re only too happy that winter is upon us, because with it comes the need for comfort food. And what better way to be comforted than by a pumpkin cupcake (with the addition of a hint of ginger).

Pumpkin Cupcakes with Cinnamon Cream Cheese Frosting

Pumpkin Cakes - Ginger Parrot

Serves 24

250g pumpkin, cooked and pureed
280g plain flour
1 tsp ground cinnamon
Half tsp ground nutmeg
Half tsp ground ginger
Half tsp ground cloves
Half tsp ground allspice
Half tsp salt
1 tbsp baking powder
Half tsp bicarbonate of soda
110g butter, softened
200g caster sugar
5 tbsp brown soft sugar
2 eggs (room temp)
180ml milk

Cinnamon cream cheese icing:

200g cream cheese, softened
50g butter, softened
350g icing sugar
1 tsp vanilla extract
1 tsp ground cinnamon

How to do it:

1. Preheat oven to 190C/Gas 5. Grease 24 muffin cups, or line with paper muffin cases.

2. Sift together the flour, cinnamon, nutmeg, ginger, clove, allspice, salt, baking powder and bicarb. Then, set aside.

3. Beat 110g of  butter, caster sugar and brown sugar with an electric mixer in a large bowl until it’s light and fluffy.

4. Add the eggs one at a time. Next, stir in the milk and pumpkin puree.

5. Stir in the flour mixture.

6. Pour the cupcake mixture into the muffin cases.

7. Bake in the preheated oven for about 25 minutes, until golden. Set aside to cool in the tins for 5 minutes before removing to cool completely on a wire rack.

8. While the cupcakes are cooling, make the icing. Beat the cream cheese and 50g butter with an electric mixer in a bowl until smooth. Beat in the icing sugar a little at a time until incorporated. Add the vanilla extract and cinnamon and beat until fluffy.

9. Once the cupcakes are cool, ice with the cream cheese icing.

10. Make yourself comfy, make a cup of hot chocolate and INDULGE!

She may have an unnatural fear of escalators, but her biggest ginger accomplishment was being called Merida by every child while working at Disney World. On a regular day, Molly can be found passionately reblogging adorable kitten gifs (ginger ones, OBVS), or staring at the ocean for the existence of mermaids and the Loch Ness monster.
