How to make gingerbread rolls

We all know that ginger is the spice of life in more ways than one. Particularly at Christmastime, when it’s ice-cold outside – both ginger hair and ginger spice are a welcome winter warmer!

Ginger snacks are great for a number of reasons, they are the perfect balance of sweet and savoury, the ginger herb has many medicinal benefits, and most importantly, they make you feel festive!

Yes yes, cinnamon rolls are great – but come on! You are a redhead! You have to try gingerbread rolls instead!

Dough ingredients:

You will need:

1/4 cup granulated sugar

1 tbsp dry active yeast



1 tsp ground cinnamon

3/4 tsp ground ginger

1/2 tsp salt

1/8 tsp ground cloves

3 1/2 cups of plain flour

1 cup of milk

2 tbsp of unsalted butter

1 large egg


Filling ingredients and preparation:

You will need:

1/2 cup of light brown sugar

6 tbsp. unsalted butter

1 tbsp. ground cinnamon

1.5 tsp. ground ginger

1/4 tsp. ground cloves

Icing ingredients:

You will need:

4 oz. cream cheese

1/2 tsp. vanilla extract

1 1/3 cup of icing sugar

2 tsp. molasses

1 tsp. warm water


How to make the dough:

  1. Whisk together sugar, yeast, cinnamon, ginger, salt, cloves, and 1 3/4 cups of flour in the same bowl.
  2. Combine the milk and butter in a small saucepan. Cook on a low heat until the butter has melted.
  3. Add milk mixture and the egg to the flour mixture. Beat together until mixed.
  4. While still mixing, gradually add the remaining 1 3/4 cups flour until the mixture is smooth and pliable, for around 4-5 minutes.
  5. You should now have a lovely Christmassy-scented dough. Transfer to a lightly buttered mixing bowl and cover with a towel. Set the bowl in a warm place and let the dough rise until doubled in size, usually for around 1 hour.

How to make the filling:

  1. Combine brown sugar, butter, cinnamon, ginger, and cloves in a bowl.
  2. Butter a 9-by-13-inch or 8-by-8-inch baking tray. On a lightly floured surface, roll the dough into a 12-by 16-inch rectangle.
  3. Spread the cinnamon-sugar mixture on top.
  4. Starting from the long side, roll the dough into a log. Cut into 12 pieces and place, cut sides up, in a dish. Cover with a towel and let rise until doubled in size, for about 1 hour. Preheat oven to 375°F or 190°C. Bake until cooked through and lightly browned, or rather, ginger coloured, for 20-25 minutes.

How to make the icing:

  1. Combine cream cheese, vanilla, and 1 cup of icing sugar in a bowl.
  2. Whisk together water and remaining 1/3 cup of icing sugar in a separate bowl.
  3. Spread on top of the warm gingerbread rolls, then drizzle with molasses as a glaze.
